ALISHAN HIGH MOUNTAIN OOLONG

The Alishan region, with its high mountain slopes, crisp clean air and abundance of sunlight is one of the world‟s greatest locations for growing tea, Oolong in particular.
Today‟s Ali Shan teas are still produced according to the methods established by the early planters. Fresh leaf is hand plucked and immediately wilted in the sun for a period of time. Next, they are placed in baskets and shaken to bruise the leaves and release the enzymes that produce an amazing juicy melon cup flavor with a lingering floral bouquet. This is followed by a period of oxidization after which the leaves are laid out to dry and finally fired. The result is nothing short of a spectacular Oolong - an almost perfect example of the best the Ali Shan region has to offer. This years Jade Oolong comes to us from a small family owned tea grower/producer. Joseph Wu, who started in tea at 17, has been growing and producing tea for over 30 years. He is responsible for the business and export duties and his cousin Si Chin Yeh is in charge of the garden, processing and packing of the leaf. Their tea farm located high up on the north side of Ali Shan National Park. This spring harvest oolong is suitable for multiple infusions. It is our experience, that the 2nd and 3rd infusions deliver the full force of flavor, mouth feel and Qi.
